Last second rib cook

I had a rack of ribs that I remembered were sitting in the fridge. I decided to cook them up tonight before going to bed since I didn't want them to spoil. I fired up the PBC using one full chimney of KBB in the charcoal grate and lit 30 more briquettes and dumped them on top. I added a oak split on top of it all.

I didn't have any of my rub made so I used the PBC all purpose rub. Ribs went on at 7:30. I checked them at 3 hours and about every 15 min after that. I pulled the ribs at 3 hours and 45 min. This cooker puts out some very moist ribs. Need a napkin for sure due to all the juices.

During the cook I kept the intake vent in the completely down position. The cooker ran right along at 264.

This morning I woke up and looked at my Mavrick and it showed the barrel was chugging along at 180. Thats 12 hour later and I was still getting a good amount of heat out of this thing. That means this joker could rival my mini WSM at those burn times granted my mini WSM uses less coals.

I am jumping on board the PBC train.
