We had a place in Laguna Beach PCB for years. We ate some good seafood down there and some good BBQ. I did have a Weber on the back deck that turned out some good food. Mostly at the beach I was I into some else cooking.

I live less than a 100 miles from Apalachicola and they are the best. I love them raw first, but will eat them anyway. The piece has been so high we haven't had any for a while. Remember the old saying....never eat oysters in a month that doesn't have a "R" in it.  :P

Remember the old saying....never eat oysters in a month that doesn't have a "R" in it.

The saying was true when oysters were harvested from the wild, mostly because of spawning season (when they're not firm and tasty), warm water season (with resulting algae blooms, etc.), and lack of refrigeration. Not so much anymore with science, commercial regulation, and most oysters coming from farms which control water temperatures and often breed non-spawning varieties.

Did not know about the farms controlling the water temp.  If they can do that, well I guess that global warming thing is on it's last legs ! ! ! 

I spent 8 years on the Chesapeake and they were pretty strict.  Pulling crab pots in the warmer months.  Tonging/dredging oysters only in the cooler ones.

A lot of the Apalach oysters are still wild caught. Every time I am down there you see the small boats with their big oyster tongs digging the oysters out of the bay. When we fish down there we will often snag on a clump of oysters and pull up a couple. They taste really good right out of the water, an intense taste.

I guess akk the oysters in Apalach are considered wild. You are right about eating oysters right out of the water. Most oyster beds are marked,but there are a lot of oysters all around down there. years ago when we got tired of fishing we would stop on a oyster bed and eat oysters. mmmm

We rake oysters in the rivers leading into Ossabaw Sound.
