Pork Milanese-Kinda with Gnocchi

I took the day off work today. I'm not getting any younger, but I still logged 125 hours at work the last two weeks, 70 last week alone, so today was a day for me! But I still wanted to cook!  But nothing too time consuming. So I stopped by the butcher shop this morning to see what might be our dinner. He just put out pork cutlets that looked pretty nice so I snagged four of those. Here's a little secret ....rub minced garlic into the cutlets before breading. For these the breading was half flour half homemade bread crumbs. Quick fried in lard then broiled til done with a bit of asiago on top. The frozen gnocchi got a sauce from the blender. Italian parsley, garlic, evoo, lemon juice, capers, and a bit of red pepper.
All was plated with a freshly sliced tomato. A glass of pinot sent this over the top!

V gives me a hard time when I cook anything in lard. (But sometimes she doesn't know when I do it)  :D ;D

I agree. In fact good lard is less bad for you than most oils brought to the same temps. The bad lards are hydrogenated, and that is basically pork flavored Crisco.
