A Big Thanks To Dee!

Awhile back Dee reviewed and recommended a knife sharpener he had just bought. The Chef's Choice Trizor XV. It sounded like a winner when I first read about it, but I didn't buy one immediately. I did buy a new chef's knife, a Misen that has a 15° edge on it, so I bought the Trizor XV. This sharpener will take Knives with a 20° edge and change them to 15°. I loved my Misen when I got it, and still do. But I converted my 25 year old, Chicago Cutlery set  to 15°, and now my so so knife set is back to being fun to use again. It is just amazing how sharp these knives are now! To be honest had I bought the sharpener first I likely would not have bought the Misen. It is still my favorite, but I don't reach for it like I used to.

Sharp knives are a real treat when cooking. I hone before I cut anything now. Just 6 or 7 strokes on the steel to align the blade
