I have always wanted to try some beef ribs, so when I saw some Prime beef short ribs at Costco today, I new my moment had arrived.
I seasoned the ribs with some EVOO, BPS Cash Cow, and a homemade brisket rub.
I followed HighOnSmoke's protocol for beef ribs and put the ribs on the MAK at 230 for 2 hours.
After 2 hours, I spritzed every 45 minutes with 50/50 apple cider vinegar and water.
After a total cook time of 5:45, I took them off and let them rest for a few minutes.
To paraphrase George Costanza, there was a little shrinkage. However, the ribs were tender and juicy, and the meat slipped right off of the bone. The flavor was very good, and even my wife thought they were good.
