got it all set up. i am cooking 16 butts (avg 8# each) tonite. temp is hovering at 220-225. the floodlight and the enclosure seem to be doing the trick. i did this same gig at halloween and had to do the butts in 3 rounds on my 75. if all goes well this will make my life easier. no pics of the uncooked butts but will get some in the morning.

i am also cooking 54 racks of ribs. once the pork comes off, i will cook them for 3 hours at 250 then put 6-8 in aluminum pan with apple juice and foil for an hour and 45 minutes to steam on my bq grill at 350. i did a test run this weekend. they were done at this point. i sauced them and let the cool in the freezer )wont need that tomorrow it will be 30 degrees. i was able to heat them at 350 for 10 minutes on a side. that set the sauce and brought them up to temp.
