What Y'all Cooking This Weekend?

The local Piggly Wiggly had 2 pack pork butts for 99 cents.  Smoking one for pulled pork, using the other for tasso and al pastor.
Memorial Day having pulled pork sandwiches with cole slaw and Kentucky Bourbon Baked Beans and spicy deviled eggs.
Sometimes you have to go in a circle to reach your destination.

Not sure what we are doing other than working on the house but now I'm am running by the pig and checking on those butts.

Brisket..... folks this is what $86 and change looks like today.  $6 per pound. What was once poor folks food is now priced lime some steaks.

Rubbed with my usual.  Kosher salt cracked black pepper paprika garlic cumin.... and a small sneaky amount of yellow curry. It works pretty good

Tee:  Looks like you do not trim a lot of fat off the brisket?  If so, how does that work.  I really would like to eliminate some of the preparation, if possible.

SRG SHRIMP COCKTAIL

I get the RAW Tail On 21-25 count shelled shrimp at Costco about $8.00/lb, 2lb bag


Rinse the thawed shrimp in cold water, let drain.
Marinate overnight in Trader Joe’s Garlic Oil and Smoke seasoning

 
Trader Joe's Smoke seasoning consists of Paprika flakes, Sea Salt, Garlic and Basil

Grill-Smoke the marinated shrimp on the SRG, smoker box filled with your favorite wood chips
Two minutes each side some times I cut the time back, depending on what the first sample tastes like.
Marinated Shrimp left, grilled shrimp right.

 
Cool the shrimp down and refrigerate 4 hours or longer and serve with your favorite cocktail sauce (they keep for 4-5 days)

I prefer St. Elmo, but you can use Trader Joe’s for the wimps.

I'm going to do my 1st a rack of ribs. I did pork chops & rib eyes this week and they turned out great.

Actually - I do normally. But, this one was trimmed pretty nicely, so - I will let you know tomorrow evening if it was a smart decision or not. ;D

I am smoking a brisket Saturday night/Sunday morning for Sunday's dinner. $1.99/lb choice from Kroger, same as the last one I smoked. For Memorial Day, we are doing smash burgers it looks like. I may add some dogs to the mix as well.
A revolving door of cookers and smokers. Some are keepers, some are here today, gone tomorrow!

Lots of good eating going on this weekend.  Sure would be nice to get a sample of everything!

Fired the keg up last night at 7:30, butt #1 just came off and wrapped.  Sliced the other for the tasso and al pastor, marinated them 24 hours, they just went on after removing the butt.  Added some pecan for smoke, still had plenty of lump left.
