I don’t usually like to do this, steal a friend’s bacon and post before he has a chance to; but what do you think about a guy that closes up his carry out and heads to sunny Las Vegas for a week? If I run out of beer while he’s gone I’ll have to drive at least 2 blocks farther and I won’t get my favorite pizza on Wednesday. Hope you log in and see this Brad!

Sandman runs a carry out just 3 blocks from me. He is a fellow Traeger owner and we swap samples of our cooks some to get an opinion on it. Awhile back he showed me a vacuum sealed package of buckboard bacon he had curing. Then he gave me a sample bag of it he had sliced thin. When I opened it, I smelled bacon. I fried up some for my lunch along with two eggs and some rye toast. Man that was good and I have to make some of that.

Sandman had also bought a PBC he said came in and would have it at the carry out Sat. When I stopped in, he had it fired up with 2 half racks of ribs cooking. They were about done and did they ever look good.

Anyway hope you’re having fun in Vegas and I am sure you will want tell us about your new toy when you return! Smokin Don

Toney & Kimmie, fixing and eating eggs are a ritual for me. My Mother used to get them this way by frying in bacon grease and basting the tops with the grease. I do it by frying in a little bacon grease or olive oil, as soon as I break the eggs in I cover with a glass lid. I can see them and as soon as the yokes show they are getting cooked on top they are to to my liking. I like a little crispy edges, yoke hard on the bottom half and runny on top. I get to dip my toast in & eat with the sides, then I eat the whites and save the yokes till last!  :P One of Moms grandkids told her I want some of those eggs with lace around the edge! I guess I am a little fussy but I can never get eggs the way I like them if I eat out. Don

This was Sandmans bacon, maybe he will give us the recipe when he gets back from Vegas. I said that in the post TH!  ;D Don

Tonights supper! I will post the recipe later. I have been wanting to make the potatoes for a while. Turned out pretty good.
