What a great and novel idea.

If I would have known or thought about fries in duck fat I would not have wasted the last duck fat I acquired on frying duck liver in it. :(

Thanks for posting it.

Look great Rick..but how are the fries any better fried in duck fat as opposed to regular canola oil?

Duck fat fries are never tainted with ketchup.  They are either eaten "plain" with just enough salt to bring out the savor or accompanied by a dollop of real, home-made mayo into which one just dips the tips.  For desert, either Lipitor or Crestor is recommended   ::)

Believe it or not but duck fat is better for you that butter.
