I haven't seen pictures of people using the grate in the PBC.  I'm guessing that's what you used.  Could you give some details on the cook?

Yep, on the grate. 20 minutes in the pan, flip out of pan, 20 more, then, flip again til done. I jerk at 180/185. Clean em' up, sauce em', then pick boxers. Picking right ones is the monkey's uncle!  ???

Practice cook for first comp in a few weeks. Only did 6, usually, 12 for contest. Outstanding taste from my PBC. Thank you, manufacturer!  ;) :-*   OD

Kings Mt., NC, Firehouse BBQ Championship. 55 teams, KCBS rules. OD got 23rd in chicken with his first time PBC cook. Strange scoring fluctuations in all categories. Lots of complaints. Must have had a few "green" judges. Love that PBC. Maybe have to move away from that "cup cake" shape.  :-\

Good showing OD, but you should have scored higher with that PBC chicken...those darn judges..... >:( ;)

How dis you and Billy do in other meats? I wanted to get down to Kings Mtn. to see you all - but the weather here was so bad, I figured it would not be a fun drive.

It sure ain't the money we won! >:(  Weather was rough up to midnight Friday. One pop up got wiped out. Started cooking at midnight. My brisket went dry on me in the box, finished in the mid thirties. Billy bombed in ribs and pulled pork. Never seen so many sixes. I got a six on taste of my brisket and the next judge in line gave me a 9! Go figure. I think we finished 34th overall, out of 55. This is no time to whine, it's time to get back on the swine!!   ;) :D :D  OD




Sorry about the blur. The box looked pretty good in reality. Got 3 nines and two eights.
