did up some spatchcock chicken...wanna use some of it to make Smoked Chicken Noodle soup. Got the recipe from Andy Groneman of Smoke on Wheels.




Here is the recipe:
Ingredients-
1 chicken (smoked, shredded or pulled)
1 Sweet onion
Celery
Carrots
Minced Garlic
Peas- frozen
Corn- frozen
Milk
Chicken Stock
Salt/Pepper
Egg Noodles (I use frozen)
 Instructions
Chop and dice onion, celery, carrots and garlic. Saute in pan until cooked. Set veggies aside and add small amount of chicken stock to the pan to deglaze. Add veggies back in.

Pour in the rest of the chicken stock, milk and peas/corn. Bring veggies to temp and add chicken. Once the mixture come to a bubble, add your noodles. Season with salt, pepper or your favorite chicken rub.

This is a really delicious and extremely easy recipe!!!!!

My chicken noodle soup recipe does not have peas....... ;)

It was pretty good! Skin was nice and crispy! Don't like the way it peeled back on the bird on the right. Made a cutting mistake and thought.......think I will use some string to sew it up...NOT! ??? 8)

Next time try cooking it skin side down the entire time. The juices stay in the meat and "pool" while the skin turns out nice and crispy. It is the way that Old Dave does his and I tried it recently. It was very moist!

That smoked chicken soup recipe sounds delicious and your chickens have great color on them. I guess that I could pick the peas out of my bowl of soup.
