Looks like you are all the way back, Dr. B. I'm with pz - I like them thick and crusty - those fit the bill. What kind of wood did you use?

  It's been quite a few years since I've been able to make that specific pork chop.  I realize that sounds silly.  Especially since all I did was grill directly for color, then set aside for smoky love.  There's something this rig can do I wasn't able to get from the weber, mecco, Hathorn and the few other odd grills I have.  It's about the way air travels through it, it reminds me of cooking over a hole in the ground. 

  I did this cook to celebrate doing the first sound test of a pair of old Altec loudspeakers I found discarded on the side of the road.  I did a complete frame-off restoration and am nearly done.

  Thank you!  And, been stalking my frequented grocery store for pork spares.  I need an extended cook.  I wanna play with fire!  I need to find my digital probe temp thingy, something for grill height temperature.  I'm not used to the rig yet, yet.

I still use an old pair of Bose speakers with my TV. No 5.1 for smoke. Give me two speakers and a sub and I am all set.

That pork looks really good...hope you find your spares soon...wanna see those smoked up.
