Great idea - I have left over pork I'm going to try using that idea  ;)


We did pressure cooked pork and pinto beans with chiles


Throw in a couple of cups of dried pinto beans

Pick out your favorite dried pepper pods - these range from mild to medium to hot with the dried jalapeno being the hottest in this mix

Cooked for 75 minutes - hard to pull the pork out of the pot without it falling apart

The peppers were de-stemmed, and placed into a pot with the cooking liquid - stick blender to liquify - salt and pepper to taste

3 fresh pepper types used: pasilla, jalapeno, and Serrano - diced and mixed with the pork

Seasoned pork with the fresh peppers layered onto a layer of corn tortillas, then sauce spooned over the top, and smoked cheddar cheese in alternating layers (like a lasagne)

350F for about 30 minutes

Peppers still had a crunch, pinto beans and pork make a great combination especially with the smoky cheese flavor, and gentle heat of the chile sauce

Leftover PP sandwich & BBQ baked beans for lunch, and lovely daughter #1 is in from school on fall break, so we went to our favorite Mexican place for dinner. Chicken quesadilla, with guac & sour cream.
