I still don't have much of an appetite, but all this talk about gravy did sound good. So, I decided to make myself a treat - this is our Christmas breakfast. My MIL makes her cream gravy (doesn't have a drop of cream in it - she uses 1% milk...  ;D ), poached eggs and toast. I decided to make some speckled gravy, eggs, and toast. I make my gravy with whole milk and lots of pepper (also missing from the MIL version.) So a couple tablespoons of butter and flour, cooked for a few minutes add the milk till smooth and lots of cracked pepper. Poached some eggs and made some toast.

I've found that with the lack of appetite, if I don't make it interesting and quick, I lose interest - so this was both. Roscoe enjoyed the leftovers!  ;D

Thanks, Gene. They still don't know the underlying problem. I see an allergist tomorrow - hopefully will learn something there. But with all that has gone on, my immune system is shot and I am open to infections and have some bad ones right now... it bites. I really miss cooking, but not a good idea for me to cook for others right now...  ;) ;D Thank goodness I can keep getting good ideas here!

You know...that looks like a really nice spin on traditional eggs benedict.  I love making gravy and poached eggs...I think I'll be trying this soon.
