My goodness, David - you sure know how to tempt a guy.  It's almost bedtime for me and I have the craving to do a poached egg on toast with melted smoked cheese, and topped with leftover white gravy my wife made the other day.  She sears pork chops, then uses the brown bits to flavor her gravy - salty and yummy.

Man, I have to quit thinking so much about food  ;D

You know...that looks like a really nice spin on traditional eggs benedict. 

David, Like Happyappy said, a nice twist on Eggs Benedict, especially with your Canadian bacon suggestion. I have some leftover gravy I made the other evening. I may have to give this a try.
