I got caught up with the Biscuit Making.
« Reply #-1 on: October 14, 2013, 06:30:54 PM »
After reading about you folks making homemade drop biscuits with great success, I decided to try this myself. For me, it took about 15 minutes to prepare as I do everything in slow motion.

What I did was to take Hungry Jack pancake mix, 2 TBS baking powder, 1 TBS salt, 2 TBS sugar, 1 stick butter and 1 cup of milk and mixed it all together to form the mix. Then I spooned it on to the cookie sheet and baked for 20 minutes. I could sit until the timer went off.

This is my first endeavor since the operation and this is one of my better days. Believe me, it is one step forward, two backward, and it is a slow climb. Here's a couple of pictures of the results.

As I was doing this, I had a couple of ideas for kicking these up a notch. I was thinking of adding cinnamon sugar to the mix or sprinkling the top with cinnamon sugar. In addition, a nice touch would be to add cheddar cheese or pepper jack cheese to the mix with a couple more choice spices like Savor W.O.W. Might be interesting flavors.

I sure would like to make some real sausage gravy after watching you guys.

Have a good one.

Those are some fine looking biscuits, Ed. Do you taste a difference between the pancake mix vs. Bisquick or a homemade mix? I'd never thought of the pancake mix, but it sounds interesting.

Many years ago, I thought about traveling the country and doing a photo book about roadside diners and their biscuits and gravy...

When you do the tour, be sure to stop in here at Backyard Jack's...we'll have some biscuits for you along with some kind of gravy.

I'd like to be included on the itinerary...

You know, I saw the picture of the box which had the waffles on it and the comment said that it was Bisquick. I went to the Hungry Jack website and, indeed, they had recipes for biscuits using their Hungry Jack pancake mix. So, I browsed the internet for drop biscuits and saw some that I like and a modified it for my own taste. It has been so long that I had Bisquick biscuits, I cannot remember if there is any difference at all.

Why don't you do me a flavor and bottle me up your sausage and gravy mix and send it to me.

Fine looking drop biscuits.

I love the Cheddar Bay biscuits from Red Lobster.

We have a recipe book that has a clone for them and they use bisquick.

I had some similar ideas (not with the cheese though) and one of them included some W.O.W. rub. Ever since I got back from the gathering and started my little biscuit quest, I've had biscuits on the brain!   ::)

Some fried chicken gravy or poke chop gravy would be awful tasty on them biscuits to. I make them and add cheeses and jalapeno to mine. and here's another suggestion for gravy. We do like our gravy in Ohio.
"On a Shingle" or ~ Creamed Chipped Beef ~
1 jar dried beef, sliced into thin ribbons
4 tablespoons butter
4 tablespoons all-purpose flour
4 cups whole milk. Fresh cracked Pepper to taste Melt butter in a heavy pan over medium heat. Add flour to the pan and whisk for several minutes to remove the raw flour taste. Slowly pour in milk and whisk continuously until a thick sauce forms. Add fresh cracked pepper to taste and stir in the dried beef. Serve over generously buttered toast. Note: Normally you would add salt to the bechamel sauce but the beef is already quite salty so you should omit any additional salt.
I'm thinking we are gonna need a gravy making throw down or something at the next gathering.  Just sayin

Ok, Let's see if this is as Southern as I think.  Who has had biscuits with Black Strap Molasses'  or ribbon cane syrup poured over them?  I remember this as a  kid and the cook on the "Dixie Pirate"( Tug boat ) use to make 'em that way too. . .  Along with potato's and onions ... He was good ole a Georgia Boy...
