I tried to make sourdough starter from scratch... it didn't work!

That's why I'm a chef and not a baker <lol>!

I have used several sourdough starters in the past, and it's one of the sturdiest ones out there. Not picky about precise measurements or feeding times.

More sourdough loaves on the way! In the first pic, the dough was removed from the refrigerator after a 12 hour rest, and after being rested for 4 hours at room temp first. The second pic is of the dough put into two loaves after resting at room temp for 5 hours. About another hour and a half of rising before the bake!  I'll be back in two hours with pics of the finished product.

Okay, back, bread is all done. Turned out nice. This sourdough starter sure gives you a huge payback for a little extra effort!
1st pic is after a shaped rise, just before being popped in the oven. Loaves got slashed, rubbed with olive oil and doused with sea salt. Last pic is hot out of the oven!

Wife is the baker in this house, and a damn good one at that.  She has had sourdough starters in the past, all from King Arthur Flour, BUT, I'm pre diabetic (just diagnosed) and have always been VERY carb intolerant.   She got tired of baking things I couldn't eat, and giving it all away, so we have it no longer.   Anything sourdough is great in my opinion, we just can't consume, freeze or give away enough any more to make it worthwhile.   But for those of you who can handle it and keep it going, more power to you.
