Took my stab at popovers. Have always loved Yorkshire pudding/popovers, but haven't had in a long while. We were snowed in today, couldn't get either vehicle out thru the 4 ft drifts so tried to call off work, but work cancelled on me, and said stay home....too cold! Got to -19F with 25-35 mph winds. I think it was -51 real feel out early this am.
This is a sourdough popover, recipe courtesy of King Arthur Flour.
Ingredients
1 C milk
3 lg eggs
1/2 C sourdough starter, fed or unfed
3/4 tsp salt
1 C KAF unbleached flour
Directions
1 Warm milk in micro until warm to the touch
2 Mix milk with eggs, starter, and salt. Then add flour, don't overmix.
3 Heat a muffin or popover pan in oven while pre-heating oven to 450F
4 Remove pan(s) from oven, spray each hole with Pam, and fill to top with batter.
5 Bake for 15 min. then reduce oven to 375F, bake 15-20 min. more or until a nice brown color.
6 Remove from oven, and pan, serve immediately!
These came out real nice, although very orphanish as no two look alike. I overfilled one.
I put my favorite on them, apple butter! Mmmmm
