Watching Bizarre Foods. And he visited Smittys. They said they only cook their brisket for 4-6 hours. Is that possible?

Results looked excellent. Just thought that was pretty fast.

I cannot speak to the exact time, but the Lockhart restaurants do cook very hot and very fast (open fire pits).

You cook a briskie at 300-325 in a Weber Kettle and they are done in 6-7 hours...and darn good as well....
