Just got done breaking in my clay bread pan.

Went with SiFumar's Easy Crusty Bread as I have made this before and it is very simple to make. I did add smoked gouda cheese but in the pictures the bread was still to hot for the cheese to show up but it is there  :)
Oven mitts are for sure a good thing to have even after this pan has sat for a while  ::)







There's cheese in them holes  ;)

I wanted to put score marks in the loaf but I found the dough very soft to cut. Seems you don't need deep score marks in soft bread dough as it collapse on it's self. Found this video on thefreshloaf.com on scoring

Looks real good, I use a sharp paring knife with a plunge and drag motion to get the slit in mine and it seems to work real well for me.

I've been on the fence on those for quite a while, but that has convinced me. Starting my coffee can savings now for a couple of them, as I always bake 2 loaves at a time.
