Question for the bread makers

OK so when I make bread and I put my dough to rise (proof) it takes a very long time to double in size. It seems to go really well after 6 PM to the point where it will bust out of the pan I have it in. I will punch it down and let it rise again. A couple of hours later it is twice the size. So my question is this, why will it not rise during the day until the night time. Humidity, temp or just the right amount of time to get things going????

I am not a "bread maker" but it would have to be due to the combination of humidity and temp during that time of day. Must be better conditions for the yeast to grow IMHO.
