Seasoned with Byron's butt rub and sealed for a few days rest. Plan to smoke with mix of Apple and Peecan :-)

As I will be moving these into roaster oven after smoking I've gone ahead and trussed them for easy moving without falling apart

To monitor cook, I'll be using my iGrill classic for internal temp of both hunks while the iGrill Mini to monitor ambient cooking temp through the igrill app on the iPad.

Yea, I got my tech going today... :P

These bad boys are looking mighty good.

Temp control has been an issue with the avg hanging around 270.

Looking great so far!

Here's a tip to help with your temperature control when smoking on your Weber Kettle. Go get 4-6 2" binder clips, and clamp them evenly around the edge of the lid. I use 4 to start with, placed @ 12-3-6-9 position around the lid. On my kettle, I find that removing or adding one binder clip will adjust the temp 15°~25° in the direction you want. YMMV, but it is fun to play with to determine how many or how few you need to maintain temps.

Binder clips are available from most office supply stores (i.e. - Staples, Office Max), Wal-Mart, etc. Get the 2" ones, and they are usually packaged 2 or 4 in a package. Minimal investment for easy temperature regulation on your kettle. They look like this:
