After seeing so many of your photos of delicious looking PBC wings, I finally had to try it. I had a couple racks of pork ribs on the PBC for about 3-1/2 hours and with plenty of heat left to spare, I covered the grate with some seasoned wing pieces. I first basted them lightly with grapeseed oil and seasoned half of them with the PBC all-purpose rub and the other half with lemon pepper (the family favorite flavor whenever we order out for wings). I cooked them for 25 minutes, turned them over, and let them cook for another 15 minutes before taking the lid completely off for the last five minutes. They all turned out very tasty!

That's why I always feel bad when I don't have something else to throw on there when I've still got a couple of hours of good cooking fuel left! But, having things that cook up rather quickly like wings is one great way to take advantage of it.

That's why I always feel bad when I don't have something else to throw on there when I've still got a couple of hours of good cooking fuel left! But, having things that cook up rather quickly like wings is one great way to take advantage of it.
There are others who save the left over charcoal by closing the air off to the cooker. This will cause the coals to extinguish and they can be used in the next cook.
My thought is to find some kind of cast iron cooking pot that is slightly larger in diameter of the charcoal basket then using it to extinguish the charcoal by lowering it down and covering the basket after the cook is done. Maybe have a eye hook and chain to lower it down.
