Title: Snake River Farms Kurobuta Spare Ribs

I bought a bunch of stuff from Snake River Farms and over the weekend I made the Kurobuta Spare Ribs.  I must say the flavor of the ribs is extremely rich.  Very different than your run of the mill rack from the grocery store.  However, they are very finicky on the PBC.  They take much less time to cook than your traditional spare ribs.  By 2.5 hours these were done.  Here some pictures of the cook. 

The third pic is right after seasoning and placed into the PBC.  You can see where I set the apple wood chips right on top of the charcoal.  They are off set from the ribs themselves so there is no chance of fat drippings hitting the wood.  You can also see that I cut the slab in half and just used 1 hook.  This provided me room for other items to be placed in the PBC and I didn't get any burn ribs on the end.

2.5 hours later they were done for sure.  I used a PBC hook to poke the meat similar to the toothpick test. 

I highly recommend these ribs if you haven't tried them.  They are certainly more expensive than going to the grocery store but if you ever want to indulge it's worth the expense every once in a while.

SRF has some fantastic meat.  They ain't cheap but they are great.  A couple of years ago The Turtle had a brisket from SRF sent in for the Gathering here in Augusta and it was wonderful. I recommend if anyone  has some spare change, better make that dollar bills, laying around and want some special meat---SRF is the place to spend it.  Dee

That was one of the most amazing pieces of meat I have eaten in a long time.  Melted in your mouth.  It was a good thing we saved some for The Turtle.  It wouldn't have been pretty if he didn't get to eat some of the meat he paid for and had shipped there.

I have an SRF American Kobe Gold Grade Brisket and Gold Grade Cap of Ribeye in my freezer.  With as expensive as they are I'm waiting for the right people to come over for them to be fired up on the PBC :).
