I admit. I am a complete moron. I've owned my PBC for over a year and despite everyone saying what a great job it does with chicken I've wasted my time with baby backs, beef back ribs, short ribs, brisket, and pork butts. Today, I finally made a whole chicken on my PBC and it was absolutely the best chicken I've ever eaten anywhere. It was moist, it was juicy, it was flavorful, and the skin was crisp.
I also never liked the PBC all purpose rub . . . until I tried it on chicken. Plus, I discovered my vent was never set at the factory before shipping and was completely closed which would explain why my coals always went out during long cooks. UGH!

Mike that bird looks good in there! Sounds like you are on the road to "recovery"! Lol

The PBC is my main chicken cooker...in fact, that is the only thing I cook in the PBC these days.......
Your chicken looks great. I like Noah's rubs....but they are pretty salty....a little goes a long ways..

Yeah, I absolutely HATE wasting my time on ribs, briskets, and butts ! ! !

I actually did my first whole chicken too last week and it turned out amazing. I did not use the all purpose rub. I used the Savor Spices Mo Rockin Chicken and added a touch of salt. I agree that it was the best chicken I've ever made. Parts of it were so moist it seemed like the chicken was almost boiled.
The PBC rubs are too heavy on the salt for me, but it would certainly help retain the moisture. Glad you enjoyed your cook.
