Title: PBC - Ok here goes...

Got my PBC on Wednesday. Got a brisket...just put it in. Used a chimney to get the charcoal going. poured it in the basket with the unlit ones. Made a foil pan...through some applewood chips in. Hung the brisket...and it hangs down to the handle on the charcoal basket. Too long??

You might get some burnt ends, but it should be OK. Some people use more than one hook on a large chunk of meat to suspend it higher.

I contemplated cutting it in half and just hanging two pieces. We'll see how it goes.

Just keep an eye on it.....when/if you foil it, I would put in the cooking grate and set it on it....just in case...........
