Picked up a 7.5 lb Picnic shoulder at $0.79 per lb so could not resist.  Usually go with the regular butt.  Rubbed with PBC all purpose and some other stuff laying around in the pantry.  As I wanted to keep the temps around 250, only lit about 30 coals in the chimney starter.  With one rebar hole plugged with tin foil, was able to average temps of about 265.  This picnic took 4 hours to reach an internal temp of 201.  Did not really have a stall and was amazed that it tasted so good.  I used the grate as opposed to hanging. Left it in a cooler for 2 hours and was plenty hot and juicy.  Still had plenty of coals left so did some chicken breasts on the grate.  I marinate them in olive oil, lemon juice, minced garlic and herbs de Provence
Was pleasantly surprised that I was able to get grill marks being so far from the coals.  End result was super tasty.  On a side note I often make my own tortillas for tacos with my BBQ.  It is quite easy and once you taste it, you will never want to use store bought again. If anyone is interested I will give more information.

Making tortillas is quite easy.  First I want to emphasize that these are corn based. The flour tortillas are much complex and akin to making bread.  Anyway just get some Masa flour and mix with water and some salt.  Form into a small ball and press into a nice round shape.  I received my press as a gift but it costs here in South Florida around $20.00.  Masa is also easy to get here and costs less than $3.00.  If you do not want to use a press, I heard that the bottom of a heavy duty pan works well.  Cook the tortillas in a griddle or cast iron pan.  When they start to brown and puff up, they are done.  I show an photo from a previous cook.  If you have leftovers they refrigerate well in a baggy and are great with eggs for breakfast
