Received my PBC earlier this week, about 4 weeks after placing my order. Got to do my first cook yesterday evening. Prepared a whole chicken according to the PBC recommendations (cut bird into halves, sprinkle with the PBC All Purpose Seasoning, and hang from the hooks.)
The approximate time for chicken on the PBC is about 2 hours. I checked the internal temp of the breast at about 1 hour and 15 minutes and was at 165. So I pulled it off and let it rest for about 30 minutes before carving. It smelled wonderful and the juices were flowing as I cut up the beautiful bird.
The whole family really thought it was as good as, or better, than any chicken we had ever had. Nice smoky flavor, the rub was very tasty and as I said it was very, very juicy. The pressure was on to have my wife like it as she thought I was somewhat crazy to buy a smoker that "looked like a trash can". Now she understands why I wanted to get this thing. (BTW, my son and I both think it looks cool, so maybe it a guy thing).
I also cooked a rack of BB ribs which were as good as any ribs I had ever done. My only past experience with ribs was on the Weber Kettle using indirect heat, the minion method, and trying to keep the temp in the 275 degree range. The ribs took about 2 hours and 15 minutes, again faster than the recommendations and from what I have seen in the You Tube videos.
The nice thing about the PBC is that you don't have to worry about the temperature; you can just cook based on time. Once you figure out how long each type of meat takes with your PBC at your specific elevation, you should be good to go.
And of course the customer service is already becoming legendary. I have talked to Noah and Amber a couple of times and they could not be more helpful.
