I know it is a side dish but I could eat that as a meal.  I have been looking for ways to use my iron skillet so I am going to try this.

I guess recipe was not a good word. She just puts in whatever she is feeling or whatever she has. If she has green bell peppers that goes in, or red or orange or all. Jalepenos might get tossed in, onions for sure. EVOO or just light olive oil. Sometimes it is Cavender's Greek seasoning, sometimes Tony C's Creole seasoning, sometimes just salt, pepper and garlic. If we have bacon already cooked it gets crumbled up in there or maybe some finely diced smoked ham. She is just a potato freak, one of her favorite meals is just plain old potato soup (well with a lot of half and half and butter in it). She does have a really good Potato Leek soup that she sort of follows a recipe on.
