Title: White Chicken and Artichoke Lasagna

This has become a family favorite - White Chicken and Artichoke Lasagna.


The Chicken mixture - Shredded smoked Monteray Jack cheese, grated parmesan cheese, can of artichoke hearts, can of rotel, and of course some smoked shredded chicken.

The white sauce - Beat cream cheese and milk - fold in ricotta cheese and add some garlic powder and basil.  Add half of this mixture into the chicken mixture and begin building.

Onto the Yoder to smoke @ 150° for an hour - smoking with Oak pellets. Then bumped the heat up 275°.  Here it is about 40 mins into the cook.

Here is a "rough draft" of the recipe.  I don't measure when I cook and I improvise all the time.  ;D  I am glad everyone enjoyed it!!

Cooked lasagna noodles (how many will depend on the size of your pan)

Chicken Mixture -
about 2 cups cooked shredded smoked chicken
1 can artichoke hearts
1 can rotel
1- 1 1/2 cups shredded smoked monteray jack cheese
1/2 cup grated parmesan cheese
some minced garlic - we love garlic and I probably used a tbsp here
-mix well and set aside

White Sauce -
1 package softened cream cheese
1 cup milk
1 tsp garlic powder
-mix with mixer until well blended...
next add 1/2 to 3/4 cup ricotta cheese, 1/4 cup basil, and some white pepper and fold into the cream cheese mixture.

Next take 1/2 of the white sauce and mix with the chicken mixture.

Then start layering.... all depends on how deep your pan is.  You want to start with the white sauce first then a layer of noodles, chicken mixture (this is where I added some fresh mozzeralla cheese as well ) and continue building.   Save enough of the white sauce so that you can cover the top.  Add more cheese.... grated parmesan cheese.
