Title: Oak wood beef ribs ~ Move over brisket!

I think I've said this before but I'll say it again.....I'll take beef ribs, short or otherwise, over pig ribs or brisket.
My beef seasoning is simple, garlic powder, onion powder, a heavy load of black pepper and a touch of paprika.
I always salt my meats at least a day before.

Here I'm using lil Smokey, WSM 14.5. locked in at 230-250.

Two hours in

5 hours in, no wrapping. Let em go naked until 200 degrees IT.

I was struggling to come up with sides. Then I thought......TACOS!!

oh ya......  I would like some of those.  is that a pie tin or clay pot base in your water bowl?

I  know they taste as good as the ones HOS (Mike) cooked at the gathering and they were excellent.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

I am with you on this one. We get beef ribs at Food for Less all the time and I don't even look at the pork spares anymore. They have the best beefy flavor hands down.

Heck, I would rather smoke a chuckie than a briskie any day..... 8)

Pie tin. I was trying to collect some Jus but most of it stayed in the meat.

I've gotta look for 'em, too!  The only thing that I find are cryovaced ones that don;t have any meant on them.

Yeah those work well as beer snacks, LOL. Your best bet is to ask the butcher for English cut.

Always forget about hash in the morning... I might have to make it soon, just need some leftovers!

1Bigg_ER I am right there with ya.  I'd rather have beef short ribs over pork ribs or brisket any day of the week!

They look fantastic in the tacos, too!
