240° is my magic temp.

i threw a handful of oak pellets in my charcoal nest before i put the ribs on for a little sweet smoke.

a light whisper of smoke.  oh man, is this guy good.

well, i am very proud of myself.  i had a problem and i fixed it w/ ya'lls help.  i did cook spares instead of bb backs.  i raised my temp to 240° on my dial.  i did use a heat deflector (pizza pan w/ holes drilled into it).  works great.  ya'll can call me a sissy drummer if you want because i use a heat deflector.  its cool.  great cooks adapt to their cookers.  i have accomplish this w/ Ursula.  thats right.  who da man.  sparky da man.  :cool:

240 looks excellent to me..Will try that..not having any problems with 225 tho. Pam  ; *))

They look almost as good as my spares ;) ;D. Joking, the reason mine come out so good is because of your tips. I don't see That BBQ sauce around here any more.
So what drove ya to do spares this time.   I'm the opposite, I don't do BB cause I can't see paying $15 or more per rack when I can get the same results from the spares.

Spares do seem to cook up moister at a higher temp than 225. Using the heat deflector in the drum will help with the drippins going down the lit coal causing even more smoke....good call....sissy smoker...(http://i1213.photobucket.com/albums/cc469/s1cott11/icon_biggrin.gif)

So what drove ya to do spares this time.

some one told me that spares are more forgiving and they are cheaper.  i had wrecked 5 racks already on Ursula and the wife wasn't happy.   :'(  i have always cooked bb backs but the spares were flatter bones and the same size from left to right in thickness.  bb backs aren't like that.  i might have to start experimenting w/ spares.  ya know how much i like experimenting.  just like that 70's.     ::) ;) :D

lol, that made me laugh.  ss = sissy smoker = man who uses heat deflector in drum.  i like it.   :D
