Title: I got a new smoker

It is a Masterbuilt 30". It came with a stand with rear wheels, a cover, Rubber gloves and enough packaging to fill my recycle bin. Here is a picture of the smoker getting preseasoned.

I soaked some sockeye salmon in some brine for 12 hours.

Put in the smoker this morning to Glaze for two hours and just started smoking a few minutes ago.

Nice smoker, I know Dee loves his and a friend of mine upgraded from the smaller Master built to the 40 MB.

Thanks, I have a wife that likes to give away my work. 3 packs already gone and two more promised. She did wash the yellow Tupperware bowl I guess :)

My SiL in Florida is thinking about getting one, I'll be sure to mention this model.

He likes doing beef jerky, will this one work for that?

I have not tried Beef Jerky yet. The smoker only has one heat source and it seems not to smoke a whole bunch at lower temps like 150 deg F. unless you open the door to trick it. It spikes 15 deg above set point. I would recommend a Bradley. I still like the smoker, just have to deal with a few quirks it has.

We tried Jerkey in my son in laws and these smokers just stay too moist inside  :(

Save those pictures! You'll never see her that shiny again! Great looking salmon too! Your wife must be a relative of Mrs TF, she loves to give away the fruits of my labor. Truth be told, so do I. Nothing better than making people happy by doing something you love to do!

I gave him an A-Maz-N tube last year so that he can smoke on his gas grill.  I assume that would also work in the Masterbuilt.  But the moisture is not something so easy to overcome!

I think all smokers have moisture at start off for the first four hours. Having a window really shows how much moisture is in there. My old Bradley dripped like a siv when I made salmon and Jerky.
Its not a bad smoker, and am hoping to do a lot of hot smokes which will do a lot better smoking. I am still happy with the purchase because I have enough experience to deal with its faults thanks to learning from people from this forum and others. I saw a video when Nepas used an Amazin in the MES 40 with no problems.
