Found a vac-sealed rib-eye in the freezer and turned it into Friday supper. rubbed with some Szedged steak rub
did the top grate upside down trick down low in the firebowl. sure 'nuff, had a flareup. Lucky me. ;)

After seeing the roaring flames thought I better flip to see the carnage. But wait, I found a sizzling crust much like you'd find in a good Steakhouse

When dealing with that kind of heat you need a long reach meat hook, I use this often

Onto a hot cast iron plate for another sear in butter and a 5 minute rest. Look at those pretty mini tasty cross-hatch pattern grill marks from the grill grates that all over crust from a direct flame sear!!

That's awesome. I like to call those freezer treasures. I love it when I find something like that buried in my freezer. :thumbup:

That is the way I like my steak. A crusty char on the outside and a perfectly done interior. Some garlic butter on the steak and a baked tater to sop up all the juice!
