Title: Beechwood Smoked Unstuffed Loin Chops

Had planned on cooking these stuffed but thought the smoke may be too much for the stuffing.  Good Call.  First time trying the Beechwood chunks on pork, works very well.  I like the mild sweetness of the Beechwood.  These were fantastic, marinated overnight in sweet chili sauce & pineapple juice.  Served with corn on the cob, and the stuffing on the side.

Marinated in the Foodsaver vacuum marinator, that thing is great.

That looks delicious Bob! I need to get me one of those vacuum marinators but every time I go to buy one, I read bad reviews on them about them not lasting long and breaking. I may just have to roll the dice.

I am certainly not a Rocket Surgeon, but I did find this (http://www.genuineideas.com/ArticlesIndex/pressuremarinade.html).  So, I don't know if the vacuum thingie atually works, but, regardless, Dayum, those are some good looking chops ! ! !

What I like most about the marinator is that when the meat spends a length of time in the fridge, the vacuum seals in the odors.  I also use if for leftovers, does help keep them fresh and again keeps the fridge smelling fresh. 
as far as marinating, can't really say it makes a lot of difference, but I have noticed when doing small cuts of meat I notice air bubbles coming out of the meat as it pulls a vacuum.

Whether it works or not, who knows. The main thing is it looked great on the plate and that is what counts.

Just a thought BD...
The rotating vac marinaders I use are said to be more effective than static vac marinading because moving the meat around causes it to "flex" - seemingly forcing a faster intake of marinade/brine. Who be knowin'? 8)

I use mine a lot. (especially for chicken) I think it makes it better, & perception is reality.  :D :D :D
