This is my first time cooking fish sous-vide.
Just about a pound of tilapia, cooked @ 132° for forty five minutes.

Patted with paper towels & sprinkled with Cajun seasoning.

Onto a hot griddle for a sear, then plated with mac & cheese and a buttered corn cake.

Pretty good. Tasted just a bit "fishy" :) :)
Maybe should have used a little lemon juice.

I have never cooked fish sous vide, either. In fact, it hadn't occurred to me.
I'll have to give it a try...

If you like salmon that is one for the books sous vide. My opinion of course. Nice thing about sous vide and fish you control the final texture dependent on temperature. I'll need to try the Tilapia.

Looks fantastic! Still haven’t brought myself into the world of Sous Vide... and every time I see a cook like this I wonder what is wrong with me...lol.
