Title: Compart Duroc St. Louis Ribs on the Backwoods Smoker
Post by: HighOnSmoke on February 12, 2019, 06:43:53 PM
I purchased a gift basket from Compart Farms that had 2 racks of St Louis Style Ribs in it. I seasoned the ribs with Meat Church
BBQ Honey Bacon BBQ. I am using the Backwoods Chubby 3400 today. I am cooking at 225 and using Stubbs charcoal with a
couple chunks of apple wood.

2.5 hours into the cook and the ribs are at the right color and ready to wrap.

My wrap ingredients.

2 hours in the wrap and the ribs are ready to be glazed. I am using Kosmos Q’s newest BBQ sauce for the glaze. I left them in
the smoker for 35 minutes to set the glaze.

My plate with some boxed cheesy rice.

Ribs were great, but not quite up to their competition St Louis ribs. Ribs were tender, had some awesome bark and a good apple
wood smoke flavor.

X2.
With the winter weather & trying to recover from my last surgery, I haven't been able to do any outdoor cooking, & it's beginning to get to me.  ??? ???

Those ribs look great;  you're making me hungry.

The cheesy rice looks a little blurry... I think you cooked it too long!   :P :D
