Mix for 2.5 lbs of ground poke. Cure 1 added and this was ground thru my spice mill

I'm out of Kab, so maybe an experiment is in order.

Kabanosy is done. Outside temp has dropped some so i'm going to let em hang all night in the 6 rack.

Looks mghty tasty!!! I wonder if the poke you use is the same as what Dad always talked about? Whenever I ask what's for supper, if he was home he would answer "Poke and Grits, Poke your head out the window and grit your teeth!"  ;D  Don

He may have used a diff poke than i used  :o

Going to get some low temps tonight so i brought the kabanosy inside.
