PID set to 170F for 3 hours with convection fan off then rest of the time at 170F with convection fan on. I like the fan off during smoke time...

that was a good one Tim LMAO!! Smart cutting them in half Michael, Last time I did them whole and it take 3 times as long to dry :)

They don't lose much heat but you can control the amount of heat by the amount of powder your use. A teaspoon of it in a pot of chili for example will add some heat but still mild. Add a tablespoon and your getting warmer.
I like to use it to make hot things a little hotter. Like salsa for example. My wife likes medium salsa. I can pour a bowl of her salsa and sprinkle in some death dust and now I have a hot and smokey flavored salsa.
Mix some into mayo for a spicy hot sandwich spread.
Or you can mix a little in with your favorite rub to add a little kick.
Those three jars will last me a year and I use the stuff on a regular basis.

You should put some HazMat labels on those containers! I just smoked/ dehydrated a bunch of anchos, jalapenos and habaneros in the YS640. After smoking they went in the garage-based dehydrator to finish.
I didn't grind them, just vac packed and froze for future use while reserving some for the spice rack.
