Title: Beef Ribs Part Deux
Post by: veryolddog on August 24, 2013, 09:19:18 PM
Hello Everyone,

(http://i1120.photobucket.com/albums/l494/edsigman/IMG_20130824_144522_741.jpg) (http://s1120.photobucket.com/user/edsigman/media/IMG_20130824_144522_741.jpg.html)

Jaxon said he was going to do beef ribs so he planted the thought. As we were hungry for beef after just having chicken, I went to Wal-Mart and picked up a nice package of beef ribs with 2 slabs. After seasoning last night, this morning, I fired up the wood smoker and started the process. Here's the story.

Nice cook there VOD...those ribs look very moist...very juicy...and very tasty.

I'd love to find a couple of racks like those...

Looks like you have that smoker dialed in.

Those are some great looking  beef ribs. Do your neighbors know what time supper is being served? Betcha your door-bell starts going off as soon as they see the smoke stop.

My first thought was that sauce on beef ribs is sacrilege, but man those look good.

That sauce is generated by the brown sugar, honey, little apple juice sprayed, and the juices of the ribs. What I do is baste the ribs in those juices that are laying in the bottom of the pan that I use to steam the ribs in foil.

If you recall, I place the brown sugar, and honey in the pan, take the ribs from the grill and place them meat side down. Then I spray the bone side up with apple juice.

I think that this helps to keep the meat from burning as brown sugar, honey and the juices of the ribs liquify.

Yep..until the temperature hits approx. 350F....somewhere in the neighborhood of 350F  sugars will carbonize and burn. But - I doubt any of us would cook ribs or butt, or brisket, etc at that high of a temp. ;)

Ed and his wife are quite svelte
I wonder who he feeds all this serious barbeque to ?  ::)

Good observation Captain, I wonder if his neighbors are on the thin side...... ;)

My wife has a voracious appetite and will out eat me without any trouble whatsoever. What is really remarkable is that she will have snacks and nibbles at different times during the day and still eats a big meal. Then a couple hours late will have a few handfuls of Nestle's semi sweet chocolate chunks washed down by a big glass of chocolate milk.

She is one of those people who keeps busy all of the time and every morning at 6:00 AM she is off to Planet Fitness for an hour of exercise. When she comes home she takes Dixie out and walks her for a half mile around our subdivision and then she prepares herself to go to work for our son.

She was once a professional model until she went through the windshield of an automobile and had to be reconstructed. That was a career ending accident.

She still is very lovely to me.

Sorry to hear about the accident, Ed, but I know exactly what you mean.  My wife is the prettiest woman in the world to me.  Beauty is best described by the hundreds to thousands of special moments, special eye contact, and simple hand holding that are unique to loving a couple  ;)
