Title: smoked pastrami with my new wood.

I got a new wood made out of the skin and the pips that is left from the grapes that are pressed for wine .
I tried as wood for a grill and it was great.
now i smoked pastrami .
it was good . but i will stick to my cherry wood.

Looks great Ahron, I notice you place the oven probe above the meat.. I smoke with a Bradley and the folks on the Bradley forum say you should put the oven probe just below the meat as the moisture emitted from the meat during the cook will affect the reading if above the meat....have you done any experimentation in regards to oven probe placement?  I have been placing the probe in the bottom of the tower even if I am cooking on higher racks but not sure the temperature is as desired at the meat level..just curious....

Oh baby!! That looks delicious!

Two pieces of good Jewish rye bread, thin, of course; a nice pile of heaven and several slices of provolone melted over the pastrami; and don't forget some good deli mustard with a little horseradish bite to it.  That would be delicious!!  Great job, Ahron.

the Problem with this wood it leaves a strong sweetish  aroma on the meat .i don't like it on pastrami .

i got 2 probes in the smoker ,one is the original and the added one ,
if i put it to low it will go crazy as  the Heating Element goes on and off. but it is my on Preference no  .i found it works great .

Thanks Ahron, I have been experiencing some of the "will go crazy" so going to give this a go when I get home...
