Got a couple of Boneless Pork Shoulders from Costco...

One was liberally coated with Instant Gourmet Original...

And the other one was coated with Gunpowder rub...

I put them in the Bradley last night at 10PM....

I programmed the PID to start at 220F for four hours and loaded 12 Hickory pucks(4 hours of smoke) with convection fan off. Then after 4 hours it bumped up to 240F and convection fan on. They were finished at 9:00PM the next day. I pulled them at the same time with a IT of 191F and 196F...

They are now in FTC :)

Gunpowder was great. It gives a nice bark! And you can't go wrong with instant gourmet :)

Eating good in the high desert my friend!  I have been using the gunpowder for grilling. Mixed with wooster sauce it is nice.
The IG Original hasn't had a bad review yet...I had some this morning on some eggs.....good stuff!!

Great Job, looks moist and good bark.  Good price too. My COSTCO is never that cheap.

Nice cook muebe!    Believe it or not I (the church) paid 1.29 a lb for the pork butts I bought the last 2 weeks .  Now that's a good price.  But it does help to buy 30 + at one time   ;)
