Got some shorts on the rack a few weeks ago and wanted to clear out a spot in the freezer for a brisket that was sitting in the fridge. They weren't the prettiest butchered ribs you've ever seen. They had not been marketed for retail. It was just a piece that the butcher had "laying around" in the back. I wasn't about to argue for $2.50/lb. Put them on at 7:00 this morning. Wrapped in butcher paper at around 11:00. Off the pit at 1:00, and then let them rest on the counter in the butcher paper until 3:00. My wife likes the little bit of lean meat at the top (which was the star of this batch of ribs), and the boys like the fattier meat so everyone was a winner.

them thar beef ribs are looking mighty fine! Good work--hard to even find beef ribs around here, much less be able to afford them!

I don't know how I missed this one, those look great, I wonder if Hutchins has beef ribs like this???

Very nice! We get em for 1.49 to 1.99/lb usually but arent that meaty.I get them frozen and have them cut the racks in half lengthwise,keep frozen.
Then give a section to the dogs when we leave home to bribe em to be good.They are starting to look forward o being left home alone.
Someday hope my beefs on the PBC will be that nice,you nailed em.

He has them on Saturdays (but not always if his distributor is out). They are (of course) not part of the AYCE.

Are you sure you aren't getting beef back ribs? They taste great but are far less meaty than shorts. That price sounds it would be for backs.

Look amazing, did you keep it simple Texas style salt and pepper?
Any beef I do, I just use salt, pepper, and some garlic powder, and let the beef and smoke speak for itself! 8)

The majority of the rub is 50/50 S&P, but I do put a little bit of garlic, onion and white sugar in my beef rub. I also put some coffee grounds in. Most of the Texans that I know that profess to using S&P only are lying through their teeth. :D

I hear you on the lying but I have used nothing but that and it truly was perfect

Great looking rib. Agreed that it tastes great. Just saying that it is a bit of a catch phrase that folks use. Most of the time, you can clearly identify other ingredients in the rub (Franklin). It is the same as when you hear people talking about cooking brisket at 200 degrees for 24 hours. It is a sound bite. ;)
