Title: My WSM 14.5 was feeling neglected

Got some 80/20 beef and chorizo meatloaf. Added some sauteed onions, mushrooms, green peppers, carrots to keep it most. Then wrapped in BACON!

Fired up Smokey, added pecan wood.

Added russet potatoes on the second grate for mashed potatoes. Gotta have mashed potatoes with meatloaf. When I do whip up mashed potatoes I don't let water touch the spuds. So this worked out pretty good.

Gotta have mushroom gravy.

Tell me more about the Chorizo/Meatloaf combo.   I turned Wendy on to chorizo a couple of weeks ago and she just loves it and this meatloaf concoction sounds right up our alley........

Ok here's what I did
1# 80/20 beef mix with half a pound of chorizo.
finely dice half a medium onion, green and red peppers (poblano or jalapenos work better but didn't have any). Chop up some button mushrooms and garlic. saute the veggies with about 2 tablespoons of tomato paste until tender, cool and add to the meat.
Beat one egg plus one egg yolk add to the meat mixture. Add about 1/3 cup bread crumbs (or oatmeal), salt (go easy, chorizo has plenty of salt)
Now get in there and mix that mess up. If it feels dry, add some ketchup or beef broth. Shape into a loaf and refrigerate while you fire up the cooker.

I don't cook meat loaf in a loaf plan, I don't want it to sit in its own juices.

Notes:
I use more yolks than whites because yolks give me a tender moist loaf
Chop the veggies in a food processor.
Mushrooms add moisture to meatloaf
I didn't add any spices because chorizo has plenty. Ground pork works just as well in place of chorizo but I normally add Paprika, ancho chili powder to the veggies while they saute.

Thanks BD! My first time using smoked potatoes for mashed. But all my mashed potatoes are made from baked potatoes.
On my happy days my mashed potatoes ingredients are: baked potatoes, butter, butter, butter and salt.

Sounds great!  I sub in some heavy cream for some of the butter, but, just the idea of "Smokey-Smashed Potatoes" has got my mouth waterin'  ! !
