Cooking Beef Ribs on charcoal (first since the seventies)

My first charcoal cook for over 30 years.
Cooking a nice rack of Beef Ribs
Using the Minion Method for heating the charcoal

Adding foil Hickory packs

Temperature is holding steady around 220 degrees

Adding ribs

After 2 hours temp is staying at 215

Getting a nice bark

3 hours and temps are great. Spritzing with diluted beef broth. 3 hours to go.

Final spritz after 5 1/2 hours. Temps never rose above 235. I did a good mod on the cooker.

Now the money shot.............with a sweet kale and dried cranberry salad.

Extremely moist and flavorful. I used Bobby Flay's beef rib rub recipe but added 1 Tbls steak spice also.
Will post the recipe.
Made me realize how much better tasting cooking over real coals is.

Good looking plate.  I've never tried beef ribs, only because they look anemic in the kryo-pac at the supermarket.  But after seeing what your results were, I'm gonna have to give 'em a try!

those do look good.  charcoal is great.  everyone should cook on a charcoal grills.  food just taste so good.
