Sous Vide Scallops

I liked LostArrow’s sous vide scallops so much that I finally made my own.  This is the plated picture of the U10 scallops from Sam’s Club with a buerre blanc sauce, angel hair pasta with shaved Parmesan cheese and a little dried basil along with some French cut green beans.  The water temp was 140.  The scallops bathed for 40 minutes while I made the buerre blanc sauce.  My wife, who has been really picky since all her medical problems when it comes to food, really liked this one.  Already planning on making this again.  The scallops were just right for texture, IMO.  I might try a different wine to  make the sauce next time.  I used a Pinot Grigio that was open this time.  It was pretty good.  I’d like to try a Chardonnay next time, however.

Oh , You Rascal ! Scallops !
I'm eventually going to do some Abalone, yes Abalone ! We have a H-Mart close by, and they carry live one's in a tank. There're ~ only 4" - 5", small but the last one's I bought and cooked were wonderful ! Don't know if sous vide will make a difference, or a waste of time.

Perfect sear on those scallops. A great plate!
