Sous Vide Beef Tri-Tip

I managed to pick up some Tri-Tip the other day from a buddy that owns a restaurant  8-)

Trimmed up....one for cooking sous vide (left) and the other to be frozen



4¼ hours in the sous vide at 132° with NO seasonings (just au naturel)



About ½ hour before it went to the grill I rubbed it with some Kosher Salt and granulated garlic



Approximately a 3 minute sear on each side



PERFECT!  :P



Served with sweet potato and fried sprussel sprouts w/bacon

What great timing!!  I just bought 2 tri-tips yesterday.  I am going to do one sous vide and the other one goes to the freezer.  I wasn't sure what temp and time to use.  I will follow your lead on this one.  Looks great!!

Set the Dorkfood controller to 132 and the timer to 4 1/4 hours.  Tri-tip in the pool.  Pictures later.
