Stuffed Mushroom Bombs (Picture Heavy)

I made these last night for me and the kids. I used my Weber Kettle, but I am sure this could be made in anyone of my Smokers. A lot of time but great results. It went like this.

Pull the stems out of about 15-18 White Mushrooms



Clean out all the guts with a spoon or melon baller




Place a small amount of cream cheese in the mushroom. I used spreadable cheese.





Cube up some smoked cheese into 1/2 inch x 1/2 inch squares



Season 1 pound of burger, I used 80/20, with Salt Pepper and Garlic or whatever rub you have handy.



Take approximately 1 Tablespoon of the meat and form it into a ball around the cheese cube.



Place meat onto mushroom



Cut a package of store bought bacon in half. Wrap 2 slices of bacon around the shroom ball in an X. Use toothpick to hold in place if you want.

 

Season the bacon with your rub. Place on your grill set up as an indirect cook. I added a block of Sugar Maple wood for smoke.



Let the grill do its thing at roughly 225-250 degrees.



Once the bacon has started to crisp up...



Place a little of your Favorite BBQ Sauce on the Shroom Balls



Once the sauce has set (5-10 minutes) Bring in the Shroom Balls and Enjoy!



Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Chris, I want a plateful of those puppies right now... and I'm suppose to avoid mushrooms.  That's how good those look.
