Burgers in My New Toy

I took advantage of the refurb Sous Vide Demi Supreme sale about a week ago. The only color left was red. My package arrived
this morning. Since it has been storming all day and we really wanted burgers I decided to do burgers Sous Vide style. I vacuum
packed 6 frozen 1/3 pound burgers. I will season when I sear them, like Muebe did here with the ones he cooked frozen. I used cold
water in the Demi Supreme and added the burgers. I set the temperature at 135. I figure about 2 hours and they will be ready.



Out of the bath at 2.5 hours. (Got tied up on a few chores) Lots of juices and fat in the bags.


Dried off and seasoned half with Montreal Steak and the other half with Penzeys Smoky 4S.


I seared them in my cast iron skillet with a tablespoon of butter and a bit of red chili olive oil. Seared each side for 30 seconds.


Served with some oven baked Ore-Ida French fries.


Burgers were out of this world. Should have worn a bib when I ate this juicy burger! The Demi Supreme works as advertised. I
checked the temperature a few times with my Thermapen and it was dead on each time. Can’t ask for anything better than that.
I think my son will be inheriting the Dorkfood controller. But not until I am sure this new unit will do everything I want it too!  :)

Does that thing have built-in water circulation?

No it doesn't Mike. According to the website since the heat is so even throughout a circulator isn't required.

those looks like great burgers.  what got me was......"burgers were out of this world.  should have worn a bib when I ate this juicy burger". 

you ppl make me spend to much money here.  I'm hoping for a sous vide at the end of the November for my b'day.   I want one of those burgers.

Burgers look great, Mike.  Next on your list should be grass-fed burgers and bison burgers.  They will really knock your socks off!!  Get your big bib ready, as in a surplus pancho!!
