setup for a big Thanksgiving turkey on a 22" OldSmokey

setup for a big Thanksgiving turkey on a 22" OldSmokey
2-sided indirect with a big drip pan & roasting rack



here's a stand-up chicken in the 2-sided indirect cook



the extra wire racks from OldSmokey are only $10 each
so i have one with 2 wires broken out on both sides
and one with 3 wires broken out on one side for single sided indirect cooks



and now i have a set of GrillGrates on my grilling grate for the OldSmokey

Not a turkey fan (I think I ate way too much dried poultry as a kid) but that is a fine looking bird.

The tall lid on the Old Smokey sure gives ya a bunch of headroom. Great set up and just in time with the Holidays right around the corner.

I know with my Weber 22.5" I can fit a 14lb turkey with no problem. So with 12" of head room on the Old Smokey, I bet you could fit two turkeys in there if you stand them up side-by-side.

here's some additional pics on the setup
i use a 10"x 14" pan upside down as a separator for the two piles of charcoal
and as a riser to set a 12"x 17" drip pan on. this keeps the ashes out of the drippings for gravy
